Candy Cane Meringue Clouds


When I was a small child these were some of my favorite Christmas treats. My mom would make them every year and keep them in one of her many Christmas goodie tins. The other tins would hold my other favorites such as shortbread, jam bars and fudge.

These meringues are very light and crispy, once you bite into the cookie it simply melts in your mouth and has just a slight chew from the peppermint. When I would sneak a treat in the middle of the day this was the first tin I would head for! 

Makes 3 dozen

Ingredients:

  • 4 egg whites, room temperature
  • 1/2 tsp Salt
  • 1 1/2 Cups Granulated Sugar
  • 2 tsp Vanilla
  • 1 Cup Chocolate Chips
  • 1/2 Cup crushed candy canes

Preheat oven to 250.

In a stand mixer beat the egg whites and salt on medium until it starts to form a white paste and forms soft peaks. Slowly add the sugar. Beat for another 3-5 minutes until the whites will hold a stiff peak.

Using a spatula gently fold in vanilla, chocolate chips, and candy cane.

Grease your cookie sheet. Using a small spoon scoop out about 1 tablespoon sized balls of meringue on the cookie sheet. (They look small but will puff up)

Bake for 45 minutes. Quickly remove from cookie sheet and cool on a wire rack.
