Now that summer is nearly here and the temperatures are rising, a refreshing cocktail is just the remedy needed! With fruits in plentiful supply it’s always fun to mix fresh fruit into a cocktail. I got a baby watermelon from my parents which was just the right size to make a batch of this drink as well as have a few pieces to snack on.
- Watermelon rum (3-4 ounces)
- Limeade (1 cup)
- Watermelon chunks (3-4 cups)
- Simple syrup (1-2 ounces)
I put the ice in first, about 2/3 full in the blender. I then added the watermelon chunks and the liquids. I added the simple syrup to make the mixture a little more viscous and hold together a little more. Blend to desired consistency and enjoy! Garnish with a watermelon wedge if desired.
