Perfect Pancakes

 

Occasionally we get the opportunity to stay in on a Saturday morning and cook a big breakfast and lounge around with some mimosas! Those are some of my favorite days! Or we are gearing up for a day of serious home projects, those are also some pretty good times. I love coming up with little things we can do to make this home feel even more like the place we belong. Some people think it’s crazy the amount of time we spend decorating and re-decorating, but I love knowing that my home is my oasis. A place just for us to be ourselves!

One of the best things about having a Saturday off is when we decide to make our own breakfast! Or breakfast for dinner any night of the week. Oh man….. I would eat breakfast for every meal some days! Mmmmmmm….breakfast. Lol.

There are soooooo many options when it comes to deciding what to eat for breakfast. But one of the most universal favorites is pancakes!! There are many variations of pancakes: fluffy, thick, small or the size of your head! I do love a nice big, fluffy pancake! This recipe holds together pretty well, so your pancakes won’t break when you flip them.

Well happy weekend everyone! Enjoy a nice big breakfast so you can have all the adventures!

Ingredients:

  • 1 Cup All purpose flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 Cup Milk
  • 1 Tbsp Canola or vegetable oil
  • 1 Egg

In a medium bowl whisk together the flour, baking soda and salt. Add the milk, oil and egg. Whisk together, if you have a few lumps left that is ok.

Heat up your pan over medium heat, or if you are using an electric griddle about 300 degrees. Spray with cooking spray or put a little butter in the pan. Use 1/4-1/2 cup (depending on how big you like your pancakes.) drop the batter into the pan. Cook on the first side until it starts to bubble. Carefully use a spatula to check to see if the downside is golden brown. Once it’s the right color go ahead and flip it over to cook the other side.

Pile them high and smother with your favorite toppings!!
