Who doesn’t love spaghetti and meatballs? This is a classic Italian dinner. So if you are like me you started out with spaghetti from a box and a bag of meatballs from the freezer section of Sams Club.
Then after a few years you decide to take a leap of faith and you let James Beard teach you how to make meatballs. Then you spend years trying to tweak the recipe until you find the perfect meatball. Or was that just me?
Well tonight I made homemade spaghetti and mozzarella stuffed meatballs! It was quite an accomplishment. When I was growing up for as long as I can remember my dad always made homemade pasta. It was always so much fun to help him feed the dough through the hand crank pasta roller. Pasta is definitely one of my favorite meals of all time. So I hope you all get to enjoy this wonderful meal.
Makes 9 Meatballs
1/2 lb. Italian Pork Sausage
1/2 lb. Lean Ground Beef
1 tbsp fresh chopped Basil
1 tbsp dried Parsley
1 clove minced Garlic
Pinch of salt and pepper
2 Eggs lightly beaten
1/4 cup Italian seasoned Bread Crumbs or Panko crumbs
Fresh Mozzarella Cheese Pearls.
Preheat oven to 350.
In a medium bowl mix together the meats. Add the herbs, garlic, salt and pepper and mix in well. You pretty much have no choice but to use your hands because you really need to get all the ingredients fully mixed. Add the eggs and breadcrumbs. Your meat should be moist and hold its shape. If needed you can add more breadcrumbs to help the meatballs hold their shape.
Roll the meat into balls about the size of golf clubs and make a little hole in each. Add 2-3 mozzarella pearls to each meatball. Then pinch the meat closed over the cheese and roll between your palms to create an even surface. Place them on a cookie sheet (we sprayed it with cooking spray just in case)
Pop these in the oven for 10 minutes. Then use a pair of tongs to turn each meatball, this helps them cook evenly and keep their round shape. Repeat this 2 more times for a total cooking time of 30 minutes.
Serve with a nice helping of pasta and your favorite tomato sauce!
